Fillet Medallions wrapped in Bacon on the Braai or BBQ

Bacon wrapped Fillet Medallions

Ingredients

1 Fillet cut into 50mm thick medallions

1 packet streaky bacon

1 cup Balsamic vinegar

1 tablespoon brown sugar

A little olive oil

A good meat spice or rub alternatively salt and pepper to taste

How to do it

Take medallions and balsamic vinegar and brown sugar and toss together in a bowl and allow to marinate at room temperature for one hour.

Take bacon and wrap around the outside like a skin on a sausage and pin with a toothpick i like to use two layers. On the two exposed ends sprinkle a little salt and pepper or meat rub and massage gently into the meat.

Coat meat in olive oil and braai on a hot fire till done to your liking but preferably medium to rear. Before serving remove tooth pick. Serve with baked potatoes and sour cream and a nice Greek salad
